When life hands you a lemon...

My basil plants looked like they were dying so I made pesto! I added some flat leaf Italian parsley, pine nuts, toasted garlic, and olive oil.

The bf made eggplant parmesan with his homegrown eggplants. Eggplants were sliced, dipped in egg and flour, individually pan-fried, and were then layered with pasta sauce and mozzarella. So many layers...
